Hi! My name is Liz. My primary job is being a mother and full-time cook for my family of 3. My day job is as a first-grade teacher and private reading specialist in Northern California. I have been on a path to learn about the benefits of nutrition since having my first child in 2010. I consider myself a tradition foodie (for more information, please check out the Weston A. Price Foundation) and have been gluten-free since early 2012. I was prompted to learn more about gluten and health after my son developed Acid Reflux and eczema as a newborn. It was the best decision I could have made for my family’s health!
I think the most important message to get out to gluten-free families is that real food is still amply available, even though we abstain from gluten-containing products. I think learning about where your food comes from, how it is produced, and cooking more will help you on your health-seeking journey. Now that I am gluten-free, my family eats more fresh, seasonal produce courtesy of our local farmer’s markets and our grocery bill has gone down because I make so much more from scratch!
